  • 1 onion, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 ½ cups cornmeal
  • 1 ½ cups water
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 cup shredded cheddar cheese
  • 2 cups shredded lettuce (for garnish)
  • 1 cup sour cream (for garnish)
  • Salsa (for serving)
  • Jalapeños, sliced (optional topping)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet over medium heat, brown the ground beef or turkey. Drain excess fat.
  3. Add chopped onion; sauté until softened (about 5 minutes).
  4. Stir in black beans and diced tomatoes; simmer for 5 minutes. Season with chili powder, cumin, garlic powder, and salt.
  5. In a saucepan, combine cornmeal and water; cook over medium heat until thickened (5-7 minutes).
  6. Spread half of the cornmeal mixture in a greased 9×13-inch baking dish.
  7. Layer the meat mixture on top evenly.
  8. Pour remaining cornmeal mixture over the meat layer.
  9. Bake for 25-30 minutes until golden brown on top.
  10. In the last five minutes of baking, sprinkle shredded cheddar cheese on top until melted.
  11. Cool for 10-15 minutes before slicing and serving with garnishes.
