  • 1 tablespoon granulated sugar
  • 1 tablespoon lemon juice
  • 3 envelopes unflavored powdered vegan gelatin
  • 1 ½ cups granulated sugar
  • 1 cup light corn syrup
  • ¼ teaspoon kosher salt
  • 2 teaspoons vanilla extract

Instructions

  1. Combine diced strawberries, sugar, and lemon juice in a bowl; let sit for 10 minutes.
  2. In a saucepan, mix ½ cup of water with vegan gelatin; let bloom for 5 minutes, then dissolve over low heat.
  3. In another pan, combine remaining water, granulated sugar, corn syrup, and salt; heat until boiling at 240°F.
  4. Slowly pour the sugar mixture into the dissolved gelatin while whisking; then add the strawberry mixture and vanilla.
  5. Pour into a lined baking pan and let set at room temperature for 4-6 hours or overnight.
  6. Once set, cut into squares and enjoy!
