  • 1 cup strawberries (diced)
  • 1 tablespoon granulated sugar
  • 1 tablespoon lemon juice
  • 1 cup water (divided)
  • 3 envelopes unflavored powdered vegan gelatin
  • 1 ½ cups granulated sugar
  • 1 cup light corn syrup
  • ¼ teaspoon kosher salt
  • 2 teaspoons vanilla extract

Instructions

  1. In a mixing bowl, combine diced strawberries with granulated sugar and lemon juice. Let sit for 10 minutes.
  2. Heat ½ cup of water in a saucepan over medium heat and dissolve the powdered vegan gelatin.
  3. Add remaining water, light corn syrup, and kosher salt to the saucepan; stir until combined.
  4. Bring mixture to boil, then simmer for 10 minutes until it reaches 240°F on a candy thermometer.
  5. Remove from heat and slowly incorporate the strawberry mixture; whip until fluffy (10-15 minutes).
  6. Gently fold in vanilla extract.
  7. Pour into a greased baking dish and allow to set at room temperature for at least four hours.
  8. Once set, cut into squares and dust with powdered sugar.
