  • 2 tablespoons Worcestershire sauce
  • 8 cloves garlic (minced)
  • 4 cups beef stock
  • 2/3 cup apple vinegar
  • Fresh herbs (rosemary, thyme, bay leaf)
  • 4 large carrots (roughly chopped)
  • 3 medium Yukon gold potatoes (cut into cubes)

Instructions

  1. Season the beef with flour, Worcestershire sauce, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  2. In a Dutch oven over medium-high heat, sear the seasoned beef until golden brown on all sides. Remove from pan.
  3. Sauté celery, onions, and garlic in the same pot until soft; stir in tomato paste and roast beef base.
  4. Add beef stock and apple vinegar; incorporate fresh herbs. Cover and simmer for 2 hours.
  5. Add potatoes and carrots; cook for an additional 30 to 45 minutes until tender.
