  • 4 medium spaghetti squash
  • 2 lbs lean ground turkey or beef
  • 64 oz marinara sauce
  • 3 cups mozzarella cheese
  • Olive oil
  • 4 garlic cloves, minced
  • 2 large eggs, lightly beaten
  • ⅔ cup grated Parmesan cheese, plus more for topping
  • 2 tsp dried basil
  • 2 tsp dried parsley
  • ½ cup seasoned bread crumbs
  • Kosher salt & pepper
  • Crushed red pepper flakes, for topping
  • Fresh basil, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Halve the spaghetti squash and scoop out seeds. Drizzle with olive oil and season with salt and pepper. Roast cut-side down on a baking sheet for 35–40 minutes until tender.
  2. In a large bowl, mix ground turkey (or beef), minced garlic, eggs, Parmesan cheese, dried basil, parsley, and bread crumbs until well combined. Form small meatballs.
  3. Heat olive oil in a skillet over medium heat and brown meatballs on all sides. Pour in marinara sauce and simmer for 15–20 minutes.
  4. Flip roasted squash cut-side up. Fill each half with meatballs and marinara sauce, then top with mozzarella cheese. Bake for an additional 10–15 minutes until cheese is melted.
  5. Serve hot garnished with fresh herbs and crushed red pepper flakes if desired.
