  • 400g chicken thighs
  • 1 cup cornstarch
  • 1 tsp baking powder
  • 1 onion
  • 2 red Thai chilies
  • 3 garlic cloves
  • 2 tbsp vegetable oil
  • Salt & pepper mix (Sichuan peppercorns, black peppercorns, sea salt)

Instructions

  1. Marinate chicken with soy sauce, vinegar, and garlic for 15 minutes.
  2. Toast Sichuan and black peppercorns in a dry pan; grind into powder and mix with sea salt.
  3. Coat marinated chicken in the cornstarch and baking powder mixture.
  4. Heat oil in a wok; fry chicken pieces in batches until golden brown and cooked through.
  5. Stir-fry garlic, onion, chilies, and green onions in vegetable oil; add fried chicken and toss with the salt & pepper mix.
  6. Serve warm, garnished with extra green onions.
