  • 1/2 Cup Raw Pumpkin Seeds
  • 1/2 Cup Pumpkin Puree
  • 1/3 Cup Almond Butter
  • 2 Tablespoons Honey
  • 2 Teaspoons Pumpkin Spice
  • 1 Teaspoon Vanilla Extract
  • 1 Cup Dark Chocolate Chips
  • 1 Tablespoon Coconut Oil

Instructions

  1. Cut each date in half and remove the pit. Place them open side up on a parchment-lined baking sheet.
  2. Cover the dates with another sheet of parchment paper and flatten using a rolling pin or cup.
  3. In a mixing bowl, combine pumpkin puree, almond butter, honey, pumpkin spice, and vanilla extract; whisk until smooth.
  4. Spread the pumpkin butter mixture over the flattened dates and freeze while preparing chocolate.
