  • 2 tbsp butter or olive oil
  • 1 sweet onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 tsp ground cumin
  • ½ tsp ground cinnamon
  • ¼ tsp nutmeg
  • 1 (15 oz) can pumpkin purée
  • 3 cups vegetable or chicken stock
  • ¾ cup heavy cream or coconut milk
  • Salt & pepper, to taste
  • 4 slices sourdough or rustic bread
  • 1 cup shredded sharp cheddar
  • 2 tbsp butter

Instructions

  1. In a large pot, melt butter over medium heat. Add chopped onion and cook until soft (about 5 minutes). Stir in garlic and spices; cook for another minute until fragrant.
  2. Incorporate pumpkin purée and stock, bring to a simmer for about 15 minutes. Blend until smooth; stir in cream or coconut milk; season with salt and pepper.
  3. For croutons, butter one side of each slice of bread, fill with cheese between two slices (butter side out), grill until golden brown on both sides.
  4. Serve hot bisque topped with grilled cheese croutons.
