  • ½ cup unsalted butter, softened
  • ½ cup pistachio cream or pistachio butter
  • 2 cups powdered sugar
  • 2 tablespoons heavy cream, more if needed
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract; mix until smooth.
  3. In another bowl, whisk together flour, baking powder, salt, and finely ground pistachios. Gradually combine with the wet mixture until a soft dough forms.
  4. Roll dough into 1-inch balls and place them on prepared baking sheets. Flatten slightly with a glass.
  5. Bake for 10–12 minutes until edges are lightly golden; allow cooling on a wire rack.
  6. For the filling, beat together softened butter and pistachio cream until smooth, then gradually add powdered sugar, heavy cream, and vanilla extract until fluffy.
  7. Assemble by spreading pistachio cream between two cookies.
