  • 6 tbsp unsalted butter (melted)
  • ½ cup dark brown sugar
  • ⅓ cup granulated sugar
  • 2 large eggs (room temperature)
  • 3 tbsp vegetable oil
  • 1½ tsp vanilla extract
  • ½ cup buttermilk
  • 1½ cups all-purpose flour
  • ¾ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1½ tsp cinnamon
  • ¼ tsp nutmeg
  • 4 oz cream cheese (cold)
  • 4 tbsp unsalted butter (room temperature)
  • ½ cup creamy peanut butter
  • ¼ tsp salt
  • 1½ cups powdered sugar
  • 2 oz chocolate chips
  • 2 oz heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth. Add melted butter, dark brown sugar, granulated sugar, eggs, vegetable oil, vanilla extract, and buttermilk; mix until well combined.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet mixture; stir gently until just combined.
  4. Pour the batter into a greased 9-inch round cake pan and bake for about 35 minutes or until a toothpick inserted comes out clean.
  5. Allow the cake to cool completely before frosting with cream cheese peanut butter frosting.
  6. For the ganache: Heat heavy cream until simmering; pour over chocolate chips in a bowl and stir until smooth. Drizzle over frosted cake.
