  • 6 large russet potatoes
  • 1/4 cup unsalted butter
  • 4 oz cream cheese
  • 2/3 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • salt and pepper (to taste)
  • 2 cups cheddar cheese (shredded)
  • 1 1/2 cups cooked and crumbled turkey bacon
  • 1/4 cup diced green onions

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a 9×13 casserole dish with nonstick spray.
  2. Wash, peel, and dice the russet potatoes. Boil them in a large pot of salted water until tender.
  3. Drain the potatoes and return them to the pot. Add unsalted butter, cream cheese, sour cream, and milk; mix until smooth.
  4. Stir in garlic powder, salt, pepper, shredded cheddar cheese (reserving some for topping), and crumbled turkey bacon until well combined.
  5. Transfer the mixture to the prepared casserole dish. Top with remaining cheese and turkey bacon.
  6. Bake for 25-30 minutes or until golden brown.
