  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons honey or agave nectar
  • 1 teaspoon vanilla extract
  • 2 tablespoons creamy peanut butter
  • 1/2 tablespoon coconut oil
  • 1 teaspoon honey or agave nectar

Instructions

  1. For the crust: Blend oats, peanuts, dates, and coconut oil in a food processor until sticky.
  2. Press the mixture into the base of a cupcake pan and freeze.
  3. For the mousse: Combine chocolate chips, avocados, protein powder, cocoa powder, honey/agave, and vanilla in the processor; blend until smooth.
  4. Pour mousse over the chilled crust and freeze for at least 120 minutes.
