  • 175 g Baking spread (or butter)
  • 175 g Caster sugar
  • 3 large Eggs
  • 2 tsp Vanilla extract
  • 175 g Self-raising flour
  • 25 g Black food coloring
  • 200 g Butter (for frosting)
  • 400 g Icing sugar
  • 1 tsp Vanilla extract (for frosting)
  • Green and yellow food coloring
  • 150 g Tinned custard

Instructions

  1. Preheat your oven to 140C Fan/325F/Gas Mark 3. Line a cupcake tin with cases.
  2. In a bowl, cream together baking spread and caster sugar until fluffy. Beat in eggs one at a time with vanilla extract.
  3. Fold in self-raising flour and black food coloring until fully combined.
  4. Divide batter into cupcake cases and bake for 25-30 minutes until a skewer comes out clean.
  5. Once cooled, core each cupcake and fill with colored custard.
  6. For the frosting, mix butter and icing sugar until smooth, adding milk and food coloring as desired.
  7. Pipe frosting onto cupcakes and decorate with candy eyes and sprinkles.
