  • 1 cup Cherry Tomatoes (halved)
  • 1 Cucumber (sliced and halved)
  • 0.75 cup Mixed Greek Olives
  • 8 ounces Feta Cheese (crumbled)
  • 0.5 cup Bell Peppers (chopped)
  • 0.66 cup Extra-Virgin Olive Oil
  • 0.33 cup Red Apple Vinegar
  • 2 Garlic Cloves (minced)
  • 1 teaspoon Dried Oregano
  • 0.5 teaspoon Red Chili Flakes (adjust to spice preference)
  • 0.5 teaspoon Dijon Mustard
  • 2 teaspoons Honey or Sugar (to balance acidity)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper (freshly ground is best)

Instructions

  1. Cook pasta according to package directions until al dente; drain and rinse with cold water.
  2. In a large mixing bowl, combine pasta, cherry tomatoes, cucumber, olives, feta cheese, and bell peppers.
  3. In a separate bowl or jar, whisk together olive oil, vinegar, garlic, oregano, red chili flakes, Dijon mustard, honey or sugar, salt, and pepper until smooth.
  4. Pour the dressing over the salad and gently toss to combine.
  5. Chill for at least 30 minutes before serving to allow flavors to meld.
