  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt & pepper to taste
  • Fresh parsley (for garnish)
  • 600 g potatoes, cubed
  • 3 carrots, chopped
  • 1 red bell pepper, chopped

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. In a mixing bowl, combine chicken drumsticks with olive oil, minced garlic, thyme, oregano, paprika, salt, and pepper. Toss until well coated.
  3. In another bowl, mix cubed potatoes, chopped carrots, and red bell pepper with olive oil and seasonings.
  4. Spread the seasoned vegetables on a baking tray and nestle the marinated chicken among them.
  5. Roast in the oven for 40-45 minutes, turning halfway through until the chicken is golden brown and cooked through.
  6. Garnish with fresh parsley before serving.
