Garlic Butter Steak Bites and Potatoes is a quick and satisfying dish that combines tender sirloin steak with crispy, golden potatoes in a rich garlic butter sauce.   • 1 lb Yukon Gold potatoes
  • 1 ¼ lb sirloin steak
  • ¼ cup ghee or butter
  • 1 tablespoon olive oil
  • 3 garlic cloves
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Heat a large cast iron skillet over medium heat. Add olive oil and two tablespoons of ghee.
  2. Add cubed potatoes, minced garlic, thyme, oregano, salt, and pepper. Cook for 8-10 minutes until golden brown.
  3. Remove potatoes from the skillet. Increase heat to medium-high, add the remaining ghee, and sear the cubed sirloin for about 3-4 minutes until browned.
  4. Combine cooked potatoes with steak in the skillet. Adjust seasonings as needed and serve hot.
