  • 2 large onions, thinly sliced
  • 2 garlic cloves, minced
  • 1/2 tsp sugar (optional)
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 cups beef broth
  • 8 oz pasta (e.g., rigatoni or penne)
  • 1 cup grated Gruyère cheese (plus extra for topping)
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×9 inch baking dish.
  2. In a skillet over medium-low heat, melt butter and add sliced onions. Optionally add sugar and cook for 20–25 minutes until caramelized.
  3. Stir in garlic and thyme; season with salt and pepper.
  4. Incorporate beef broth and simmer.
  5. Cook pasta in salted water until just under al dente; drain.
  6. Combine pasta with onion-broth mixture and stir in cheeses, reserving some for topping.
  7. Transfer to the baking dish, sprinkle remaining cheese on top, and bake for about 20 minutes until bubbly.
  8. Let rest for 5 minutes before serving.
