Ingredients

Scale
  • 1 sheet pie crust (store-bought or homemade)
  • 34 medium ripe tomatoes (thinly sliced)
  • 1 teaspoon salt
  • 1/2 cup shredded mozzarella or crumbled goat cheese
  • 1/4 cup fresh basil leaves (chopped or torn)
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)
  • 1/4 teaspoon black pepper
  • 1 egg (beaten, optional for egg wash)

Instructions

  1. Prep the crust by rolling it into a 12-inch circle if homemade and refrigerate.
  2. Slice tomatoes thinly, sprinkle salt, and let sit for 10–15 minutes to draw out moisture. Pat dry.
  3. Place rolled-out dough on parchment paper and spread cheese over the center, leaving a 2-inch border.
  4. Layer tomato slices over the cheese and sprinkle with basil, minced garlic, salt, and black pepper.
  5. Fold the edges of the dough over the filling, overlapping slightly for a rustic look.
  6. Brush with egg wash if desired and drizzle olive oil over tomatoes. Bake at 400°F (200°C) for 35–40 minutes until golden brown.
  7. Allow to cool for about 10 minutes before slicing and serving.
