  • 1 cup raw quinoa
  • 2 cups water
  • 1 can chickpeas (15 ounces)
  • 1 medium cucumber
  • 1 medium red bell pepper
  • 3/4 cup chopped red onion
  • 1 cup finely chopped flat-leaf parsley
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon apple vinegar
  • 2 garlic cloves
  • 1/2 teaspoon fine sea salt
  • Freshly ground black pepper to taste

Instructions

  1. Rinse quinoa under cold water using a fine-mesh strainer. In a medium saucepan, bring 2 cups of water to a boil. Add rinsed quinoa, cover, reduce heat to low, and simmer for about 15 minutes until all water is absorbed.
  2. While quinoa cooks, dice cucumber and red bell pepper; finely chop red onion and parsley.
  3. In a mixing bowl, whisk together olive oil, lemon juice, apple vinegar, minced garlic, sea salt, and black pepper.
  4. In a large bowl, combine cooked quinoa, chickpeas, diced vegetables, and dressing. Toss gently to coat.
  5. Let sit for about 10 minutes before serving to enhance flavors.
