  • 1 medium head cauliflower (or 4 cups riced cauliflower)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh basil or parsley (chopped)
  • 1/4 teaspoon red pepper flakes (for heat)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Remove leaves and stem from the cauliflower and cut into florets. Process in a food processor until riced.
  3. Squeeze out excess moisture using a kitchen towel or cheesecloth.
  4. In a bowl, mix riced cauliflower with mozzarella, Parmesan, egg, garlic powder, oregano, salt, black pepper, and herbs until combined.
  5. Line a baking sheet with parchment paper and spread the mixture into a circular shape about ¼ inch thick.
