  • 1 medium eggplant, sliced into 1/4-inch rounds
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Olive oil spray
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Set up three bowls: one with flour, one with beaten eggs, and the last with breadcrumbs mixed with Parmesan cheese, Italian seasoning, salt, and pepper.
  3. Coat each eggplant slice in flour, dip into beaten eggs, then coat in the breadcrumb mixture.
  4. Spritz the air fryer basket with olive oil spray and arrange the coated slices in a single layer. Lightly spritz the tops.
  5. Cook for 8–10 minutes, flipping halfway through until golden brown.
  6. In an oven-safe dish, layer marinara sauce, cooked eggplants, and mozzarella cheese until all ingredients are used.
  7. Return to the air fryer for an additional 2–3 minutes until the cheese is melted.
