  • 4 oz chicken or turkey bacon, diced
  • 1 small onion, finely chopped
  • 8 oz cremini mushrooms, sliced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup beef stock
  • ½ cup fruit juice (e.g., white grape juice)
  • 1 tsp tomato paste
  • 1 tsp Dijon mustard
  • ½ cup heavy cream
  • ½ tsp dried thyme
  • ½ tsp paprika
  • Salt and pepper to taste
  • 1 tbsp chopped fresh parsley

Instructions

  1. In a large skillet over medium heat, cook the diced bacon until crispy. Remove with a slotted spoon, leaving the fat in the skillet.
  2. Sauté the onions in the reserved fat until translucent (about 3 minutes), then add the mushrooms and butter. Cook until the mushrooms are browned (5–7 minutes).
  3. Sprinkle flour over the mixture, stirring for about a minute to create a roux.
  4. Gradually whisk in the beef stock and grape juice while scraping up browned bits from the pan. Stir in tomato paste and Dijon mustard.
  5. Allow to simmer for about 5 minutes until slightly thickened. Reduce heat and stir in heavy cream, thyme, and paprika.
  6. Return the cooked bacon to the pan and season with salt and pepper. Simmer for an additional 3 minutes.
  7. Garnish with fresh parsley before serving.
