  • 6 Tbsp salted butter
  • 4 medium yellow onions, thinly sliced
  • 3 garlic cloves, minced
  • 2 cups cremini or wild mushrooms, sliced
  • 68 cups low-sodium chicken or vegetable broth
  • ½ cup heavy cream
  • 2 Tbsp fresh thyme leaves
  • 2 Tbsp chopped fresh sage
  • Kosher salt & black pepper, to taste

Instructions

  1. In a large pot over medium-high heat, melt the butter.
  2. Add the sliced onions and cook until deep golden brown (about 15–20 minutes), stirring occasionally.
  3. Stir in minced garlic, sliced mushrooms, thyme, and sage; cook until mushrooms soften (about 5 minutes).
  4. Pour in the broth and add bay leaves; bring to a simmer and cook for about 20 minutes.
  5. Remove bay leaves and stir in the heavy cream. Season with salt and pepper to taste.
  6. Serve warm in bowls, optionally topped with broiled Gruyère cheese on crusty bread.
