Creamy Chicken Stroganoff with Crispy Turkey is a comforting dish that perfectly balances savory flavors and creamy textures. This delightful recipe features tender chicken simmered in a rich, velvety sauce, complemented by the satisfying crunch of crispy turkey bacon and fresh wilted spinach.

  • 2 lbs boneless, skinless chicken thighs
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp nutmeg
  • 1 tbsp Dijon mustard
  • 1 cup chicken broth
  • 8 oz cream cheese, softened
  • 3/4 cup sour cream
  • 6 slices turkey bacon, chopped

Instructions

  1. Cook the chopped turkey bacon in a heavy skillet over medium heat until crispy. Transfer to a paper towel-lined plate.
  2. In the same skillet, sauté the chicken thighs seasoned with salt, black pepper, smoked paprika, and nutmeg until browned on both sides. Remove from skillet.
  3. Sauté diced onion in the skillet until translucent; add minced garlic and cook for another minute.
  4. Stir in Dijon mustard and chicken broth while scraping up browned bits from the pan. Return chicken to the skillet.
  5. Reduce heat to low and add softened cream cheese; stir until melted and creamy. Mix in sour cream until well combined.
  6. Serve topped with crispy turkey bacon and alongside wilted spinach or over pasta/rice.
