  • 2 lamb shanks
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh grated ginger
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cinnamon
  • Salt and pepper, to taste
  • 2 medium sweet potatoes, peeled and cut into chunks
  • 1 (14 oz) can full-fat coconut cream
  • 2 cups beef or chicken broth
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sear the lamb shanks on all sides until golden brown (about 5-7 minutes). Remove and set aside.
  2. In the same pot, sauté chopped onion until translucent. Stir in garlic, ginger, ground coriander, cumin, cinnamon, salt, and pepper.
  3. Return lamb shanks to the pot along with sweet potato chunks. Pour in coconut cream and broth.
  4. Bring to a gentle simmer, cover with a lid, reduce heat to low, and cook for about 2-3 hours until the lamb is fork-tender.
  5. Stir in lime juice before serving.
