Instructions

  1. Preheat oven to 425°F (220°C). Toss sliced sweet potatoes in olive oil, salt, and optional seasoning. Spread on a baking sheet and roast for 25-30 minutes until golden brown.
  2. Rub chicken breasts with olive oil and seasonings. Grill or sear over medium-high heat until golden brown, reaching an internal temperature of 165°F (74°C). Let rest before slicing.
  3. In a pot with boiling water, steam broccoli florets seasoned lightly with salt for about 5-6 minutes until just tender.
  4. In meal prep containers, layer steamed broccoli, roasted sweet potatoes, and sliced chicken. Cool before sealing and refrigerating.
