  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 tablespoon taco seasoning
  • 1 package (9 oz) cheese tortellini
  • 2 cups shredded cheddar cheese
  • 1 cup enchilada sauce
  • Olive oil for cooking

Instructions

  1. In a large skillet, heat olive oil over medium heat. Sauté onion until translucent; add garlic and cook for an additional minute.
  2. Add ground beef to the skillet and cook until browned. Drain excess fat if necessary.
  3. Stir in black beans, diced tomatoes, taco seasoning, salt, and pepper. Simmer for about 5 minutes.
  4. Cook tortellini according to package instructions in salted boiling water until they float; drain.
  5. Preheat oven to 350°F (175°C).
  6. In a mixing bowl, combine cooked tortellini with the beef mixture until well coated.
  7. In a baking dish, spread a layer of enchilada sauce on the bottom. Add tortellini mixture and top with remaining sauce and shredded cheese.
  8. Cover with foil and bake for 20 minutes; uncover and bake for an additional 10–15 minutes until cheese is bubbly.
