  • 2 lbs ground beef
  • 1 cup bread crumbs
  • 2 large eggs
  • ¼ cup chopped fresh parsley
  • 2 tbsp grated onion
  • 2 tbsp soy sauce
  • ¼ tsp garlic powder
  • 1 (16 oz) can jellied cranberry sauce
  • 1½ cups ketchup
  • 2½ tbsp packed brown sugar
  • 1 tbsp fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground beef, bread crumbs, eggs, parsley, grated onion, soy sauce, and garlic powder. Mix until blended.
  3. Shape the mixture into approximately 40 bite-sized meatballs.
  4. Place meatballs on a baking sheet and bake for about 20 minutes until golden brown.
  5. While baking, prepare the sauce by heating cranberry sauce, ketchup, brown sugar, and lemon juice in a saucepan over medium heat until bubbling.
  6. Once the meatballs are done baking, transfer them to a slow cooker or large pot and pour the sauce over them. Simmer for 20–30 minutes to meld flavors.
  7. Serve warm with toothpicks for easy enjoyment.
