  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 3 cloves garlic, minced
  • 1/2 tsp dried thyme
  • 1/2 tsp dried sage
  • 1 cup vegetable broth
  • 1/2 cup milk (or plant-based alternative)
  • 12 oz ziti pasta
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cubed butternut squash with olive oil, salt, and pepper. Roast on a baking sheet for about 25 minutes until tender.
  3. Blend roasted squash with garlic, thyme, sage, vegetable broth, and milk until smooth.
  4. Cook ziti according to package instructions; drain.
  5. Combine cooked pasta with squash sauce and ricotta in a mixing bowl.
  6. Transfer mixture to a greased baking dish; top with mozzarella and Parmesan.
  7. Bake at 375°F (190°C) for about 20 minutes; broil for an additional 2–3 minutes until golden brown.
