  • ½ cup light brown sugar (filling)
  • 3 tbsp softened vegan butter (filling)
  • ¼ cup melted Biscoff cookie butter (filling)
  • 2 tbsp softened vegan cream cheese (icing)
  • 1 cup powdered sugar (icing)

Instructions

  1. Combine warm dairy-free milk and ¼ cup of light brown sugar. Sprinkle yeast and let sit until frothy.
  2. In another bowl, whisk flour, ground cinnamon, and salt. Mix the dry ingredients into the yeast mixture until a dough forms.
  3. Knead the dough on a floured surface for 5–7 minutes until smooth, then let it rise in a greased bowl for about 90 minutes.
  4. Prepare the filling by mixing remaining light brown sugar, ground cinnamon, softened vegan butter, melted Biscoff cookie butter, and crushed Biscoff cookies.
  5. Roll out the risen dough into a rectangle, spread the filling evenly, roll tightly into a log, and cut into equal pieces.
  6. Bake at 350°F for approximately 20 minutes or until golden brown.
  7. Mix icing ingredients together and drizzle over warm rolls before serving.
