  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 2 teaspoons vanilla extract
  • 3/4 cup maple syrup
  • 1 1/2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 1/4 cup confectioners' sugar

Instructions

  1. Preheat your oven to 400°F (200°C) and coat a nonstick donut pan with spray.
  2. In a large bowl, mix together the flour, baking powder, pumpkin pie spice, salt, and baking soda.
  3. In an electric mixer, cream melted butter with brown sugar until smooth. Add eggs one at a time, then mix in pumpkin puree and vanilla extract.
  4. Gradually add dry ingredients to wet mixture until just combined; avoid overmixing.
