  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Prepare a 9-inch springform pan by wrapping it in tin foil and greasing it lightly.
  3. In a bowl, combine graham cracker crumbs, brown sugar, cinnamon, and melted butter to form the crust. Press into the bottom of the pan.
  4. For the cheesecake filling, beat cream cheese until smooth, then mix in sugars, cinnamon, cornstarch, vanilla, sour cream, and eggs until just combined.
  5. Layer spiced apple mixture over the crust and pour the cheesecake filling on top.
  6. Bake in a water bath for about 60 minutes or until edges are set but center is slightly jiggly.
  7. Cool gradually in the oven with the door ajar before chilling in the fridge for at least 4 hours.
